History

A Centuries-Old Story
Azienda Agricola Vettori was reborn in 1990 with the decision to completely restructure the vineyards to obtain better quality from the grapes, which are then processed on the farm. To achieve this, the planting density was increased, and different clones were selected for each variety to gain diverse contributions from each type of grape, each with its unique nuance. Guided and integrated pest management is adopted to protect against adversities, ensuring healthier and more wholesome grapes.

At Azienda Agricola Vettori, we practice simple agriculture in harmony with the natural rhythms of the seasons. We follow meticulous winemaking and a series of processes dictated by time rather than enological machinery. The result is wines with distinct personality and typicity, striving to capture as much as possible of what was in the original grapes.

Azienda Agricola Vettori is a member of FIVI - the Italian Federation of Independent Winegrowers, a non-profit organization that aims to promote and protect the figure, work, interests, and technical-economic needs of the independent Italian winemaker, understood as the entity that carries out the complete production cycle of wine, from grape cultivation to bottling and commercialization of the final product.

Our wines are an expression of the terroir, the climate, and the care we put into both vineyard cultivation and cellar processing.

MANZONI BIANCO

The particular character of this grape requires maximum attention during harvesting and winemaking in order to fully enjoy the delicate fragrances that can be obtained (a reminder of the original Riesling present in the original crossbreed). Therefore, it is harvested, quickly pressed, the must is cooled, and selected yeasts are inoculated. Fermentation occurs around 18-20°C. It is storaged on the lees until the following spring when racking, wide filtration, and bottling take place.
GRAPE VARIETY: Incrocio Manzoni 100%
COLOR: Pale straw yellow
AROMA: distinct, intense, very refined, with hints of white flowers, citrus, and tropical fruits
TASTE: fine, not overly soft, clean, very elegant, full-bodied, alcoholic
FOOD PAIRING: goes well with starters, even savory ones, soups, risottos, and fish dishes however prepared
SERVING: serve not too cold, around 11/12°C, and open the bottle just before serving

VALDOBBIADENE EXTRA DRY D.O.C.G.

This sparkling wine originates from a selection of Glera grapes grown in our vineyards. The vineyards are cultivated using the Sylvoz method, with a density of 3,000 vines per hectare. This allows a low unit production per vine and a better quality of the grapes obtained. The base wine is obtained through meticulous white vinification, soft pressing, must clarification by refrigeration, and controlled-temperature fermentation at around 19/20°C. The subsequent secondary fermentation occurs in an autoclave at low temperature to preserve the typical fragrances and aromas of this grape variety.

AROMA: Elegant, clean, with hints of apple and wisteria and acacia flowers
TASTE: dry, pleasantly acidic, harmonious
PERLAGE: Fine and persistent bubbles
PAIRINGS: primarily an aperitif wine, but also excellent with spicy oriental cuisine
SERVING: Serve at around 7/8°C and open the bottle just before serving

VALDOBBIADENE EXTRA BRUT D.O.C.G.

This sparkling wine is produced from the finest Glera grapes from our vineyards. The vineyards are cultivated using the Sylvoz method, with a density of 3,000 vines per hectare. This allows a low unit production per vine and a better quality of the grapes obtained.
